Hand Selected and Hand-Roasted Coffee for the Freshest Flavor Possible    

In choosing the coffees to be served at the bakery, I decided early on to limit my choices to those select, premium coffees from around the world that provide the best possible taste without blending.   I also decided that I would do my own roasting, as this would give  me the opportunity to serve the freshest cup of coffee in West Texas.   I contract procure the green beans, but I do the final roasting at the shop and pack it in protective airtight coffee bags to offer my customers the finest and freshest flavor possible.

Guatemalan Antigua one of the finest of the world coffees available.  This type is known as a single origin bean, grown in the volcanic soil of the mountainous Antigua region of Guatemala, above 3000 feet.  In the world of coffee, we are told that higher almost always means better. This Gratemalan location and climate produces a coffee that is universally described as providing a smooth, perfectly balanced cup, with a full flavor, and rich aroma.    This is available every day.
Mexican Altura the second coffee selected is seldom seen in local coffee shops, but provides an outstanding flavorful cup.    Mexican Altura, from the highlands of Mexico, only 200 miles from the Guatemalan Antigua region,  is another single origin coffee from volcanic soil in the mountainous area of Coatepec  It provides a mild flavored, well balanced coffee, a perfect choice with which to start the morning.   Similar to that from Guatemala, this is offered every day.
Columbian Supremo, the third coffee we selected is probably the most widely recognized coffee in the world. Columbian Supremo is generally known as 'What Juan Valdez drinks!'.     Providing a full body, with a bright taste and wonderful aroma, this is truly a world class coffee.
Kenya AA from the eastern part of Africa that region being described as 'the coffee producing powerhouse of the coffee world'. Kenya AA offers a bright tasting coffee with full acidity that is not for everyone.  However if you are looking for a complex flavor with a full coffee taste, this is definitely worth trying. Kenya AA is offered from time to time.

It has been notably forgotten that before the 1870s, the lack of suitable storage to keep roasted beans tasting acceptably fresh, coffee was only available in the green unroasted bean form. Fresh roasting coffee in a frying pan be it at home on the stove or on the night campfire before it was brewed was the only way coffee could be consumed.   Roasting was a normal part of life during that period and it was only when Arbuckle's Coffee developed a method of supplying roasted coffee in a can that the home roasting began to decline. Today home roasting has almost completely disappeared from the American scene.

Wondering what this home-roasted coffee tasted like, I tried some of the old-time methods of roasting,  and I discovered a most remarkable thing. Mesquite roasting over an open fire greatly enhances the taste of almost any coffee used!

We all know that grilling over mesquite embers produces the finest tasting steaks one could ever cook. What is equally true is that in the hands of a master roaster who gives the roasting process the time and attention it deserves, the flavor of the coffee bean is equally enhanced.

I apply this process to Guatemalan Antigua beans, and I am thrilled with the resulting subtle campfire flavor that results, not at all overpowering, and leaving the taste characteristics of the bean's origin while  enhancing it. I offer this coffee in the shop every day, and I invite you to experience what true cowboy coffee tastes like.
