What kind
of a bakery runs out of goodies?
Er, um, this kind. We've
all been spoiled by a baking industry that has
convinced us we can get anything we want any
time we want it. But the awful truth is that
such convenience is made possible only by chemicals
and other food additives. We make our breads & donuts
just the way you would at home, with the same ingredients
you'd use. And we make them fresh each morning in batches
of several dozen at a time. Sales are episodic, so
by the time we notice we're running out, it's usually
too late to make more.
This used to be quite common, with most bakeries shutting their doors for the day when they sold out, and with customers knowing they had to get there early enough to get a good selection. Oh for the good old days!

Bread & Donuts anyway?
We use only the ingredients
you'd use if you were making donuts at home:
whole grain and premium white flour, sugar, spices,
milk, eggs and so on. The big bakery chains,
for a lot of reasons, prefer to use custom mixes
and tap water. The mixes they use may contain
various additives designed to extend the batch
life, keep the donuts "fresh" (or
at least moist) for hours while on display, make
them look perfectly symetrical, colour or flavour
them, or just make them less expensive to produce.
Increasingly, these large producers
make their breads & donuts in a factory a long
way from where they'll be sold, then ship them frozen
to the stores where they're heated, decorated and
served.
We prefer to spend a little extra time and money to make fresh bread & donuts that taste wonderful and are wholesome to eat. We also like to support local producers and employ local people. We think it matters.
Are NightOwl donuts baked?
As for baked, no, sorry,
baked donuts are called bagels. We don't make bagels.
Donuts are, by definition, fried in oil—that's
part of what makes them so yummy, especially when
they're hot and fresh. It's up to the baker to ensure
they don't absorb too much oil, but they do—they
must—absorb
some, both for flavour and texture.
Do you use any animal
products in your breads & donuts?
Yes, but no cows were harmed in the making of these
donuts. We use unsalted butter and 2% milk. We've
heard that donuts fried in lard taste scrumptious,
but we don't go there. We fry our donuts in a common
all-vegetable frying shortening.
When can I get warm breads
& donuts?
That depends on production, and production depends
on demand, and demand.... Well, the short answer is,
that depends. Monday through Friday, we fry the day's
donuts from 5:30 to 7:30 am. So a short answer
is, early.
